Growing Characteristics

Cabernet Sauvignon is a late-budding and late-ripening variety, which means it benefits from a warm, sunny location and a sufficiently long growing season. Its late bud break can reduce the risk of damage from spring frosts, but its late ripening means that cooler or less favourable sites may struggle to achieve full fruit maturity.

The variety develops small, thick-skinned berries with naturally high levels of tannin, acidity and colour compounds.
