Cabernet Sauvignon is one of the world’s most famous and widely cultivated red wine grape varieties. Originating in France, it is a natural cross between Cabernet Franc and Sauvignon Blanc and has become one of the defining varieties of Bordeaux as well as many other major wine regions worldwide.

It is renowned for producing deeply coloured, structured and age-worthy red wines with characteristic aromas of blackcurrant, black cherry, dark berries, cedar and spices. Depending on climate, vineyard conditions and winemaking style, Cabernet Sauvignon can produce everything from powerful, full-bodied wines to elegant, complex reds capable of developing for many years in the bottle.

Growing Characteristics

Cabernet Sauvignon is a late-budding and late-ripening variety, which means it benefits from a warm, sunny location and a sufficiently long growing season. Its late bud break can reduce the risk of damage from spring frosts, but its late ripening means that cooler or less favourable sites may struggle to achieve full fruit maturity.

The variety develops small, thick-skinned berries with naturally high levels of tannin, acidity and colour compounds. Regular pruning, appropriate canopy management and balanced crop-load control help promote even ripening and high-quality fruit. Under favourable conditions, Cabernet Sauvignon produces grapes capable of creating concentrated, complex and exceptionally age-worthy red wines.
