Juhfark is a traditional Hungarian white wine grape variety, most closely associated with the Somló wine region in western Hungary. It takes its unusual name from the elongated shape of its clusters, which was traditionally thought to resemble a sheep’s tail – “Juhfark” literally means “sheep’s tail” in Hungarian.

The variety is particularly valued for producing distinctive, structured and mineral-driven white wines with vibrant acidity. On the volcanic soils of Somló, Juhfark can develop remarkable complexity and character, producing wines that are often firm and restrained when young but can become significantly more complex with bottle ageing.
